ANNEX A MISCELLANEOUS BAR CONTROLS
1. Only the individual responsible for the merchandise should have access to
the keys to the bar.
2. Doors, screens, windows, etc, should be properly secured in such a manner
that improper entry becomes as difficult as possible and cannot be achieved without
leaving evidence of forcible entry.
3. Where cash registers are in use, the machines should be located in such a
position that the customer can see the amount(s) rung into the register(s).
4. It is recommended that all bars use a liquor stand with an "optic" dispenser.
The "optic" dispenser should be positioned above the level of the bar so that the
customer can see the drink being poured.
5. In the absence of liquor stands, bars should use a provincially approved shot
glass.
6. Periodically, the bar member of the mess committee should verify the
integrity of all dispensers, shot glasses, and draft beer glasses in comparison to the
units of accountability.
7. Entities/outlets with bars which have a sales volume in excess of $10,000 per month should consider the introduction of automatic dispensers available on the market.
